Preserving Parsley: The Chef’s Method:

Start with obtaining fresh parsley, ideally at its peak freshness. Wash the parsley and place it on a cutting board. Using a knife, coarsely chop the parsley.

Subsequently, place the freshly chopped parsley in a sufficiently deep bowl. Add a tablespoon of baking soda and pour cold water over the parsley to ensure submersion and dissolve the baking soda. Using a spoon, gently press the leaves into the water, facilitating thorough soaking.

Allow the parsley to soak for approximately 15 minutes. During this time, clean the cutting board with vinegar alcohol to eliminate bacteria and prepare it for future use. After 15 minutes, rinse the parsley under running water, changing the water about three times.

On the cleaned cutting board, lay a clean sponge cloth, and n top of it, place the drained parsley. Thoroughly dry the parsley with the towel. Now, prepare a clean, dry jar, lining its bottom with paper towels. Press the towels against the jar’s walls using a spoon.
